The Bearded Tooth (Hericium erinaceus) is a delicious edible mushroom with spherical sporocarps. It has been used in the Traditional Chinese Medicine since time out of mind. Its sporocarps are white, spherical-shaped and spiny on surface resembling the spiny coats of some animals. The flesh is thick, soft, whitish, odour and taste pleasant, fruity. It is a popular menu item in Asia and can be found in dried form as an ingredient of dietary supplements also in this country. It is rare in our conditions though, fructifying usually from July to October as a parasite on live trunks of broadleaved trees. The flesh of the Bearded Tooth is juicy and tender having a slightly horseradish-like flavour when fresh. The powder of this mushroom is pleasantly sweetish after drying. This intensive flavour is the result of interaction of 32 aromatic substances integrated therein.
